Internal Auditing Course

During this course you will acquire the knowledge and skills to plan and carry out internal audits with a focus on food safety. You will also gain an appreciation and understanding how the NZ food legislation and Australia New Zealand Food Standard Code relate to a food safety system.

This course includes an on-site internal audit activity in the processing area.

Topics typically include:

  • Principles and purpose of auditing

  • Audit types (International Standards BRCGS, IFS22000, ISO22000, SQF), food control plans, national programmes, customer supplier audit standards and their roles

  • Overview of NZ food legislation and the Australia New Zealand Food Standard Code

  • Summary of the parts of your food safety standard/s

  • Internal audit process

  • Audit planning

  • Auditor responsibilities and techniques

  • Develop audit checklist and food safety standard alignment

  • On-site audit of part of the food safety standard

  • Audit findings and decisions - compliance, non-compliance, and recommendations

  • Audit Report and follow up
