A national working group of health inspectors, food safety specialists, and industry fermentation experts worked together to create guidance on fermented foods.

The guidelines include fermented vegetables, sauerkraut, kimchi, yoghurt, plant based cheese, Natto, tempeh, koiji & miso, kombucha, kefir and others.
